Brits think hospitality companies like pubs, restaurants and hotels are operating on a 40% margin, fashion retailers on a 47% margin and supermarkets taking in profits of 50%. Of course, were that true, the debate would be about the public realm being overloaded with pubs and bars, rather than the fact that so many of them are disappearing.
